The Mixologist: Cucumber & Dill Gin Fizz

Dill & cucumber gin fizz

Is there an evening that can not be improved with the simple addition of a gin cocktail? As the long summer days give way to autumn’s amber breeze, we all start to retreat inside. But there’s no reason to give up on the zesty elegance of a gin fizz.

Inspired by Shay & Blue’s Almond Cucumber fragrance, this cocktail combines fresh cucumber with the subtle hint of dill and the zing of limes making a refreshing and somewhat savoury cocktail – perfect for embracing the seasonal transition.

Dill Syrup:

170g sugar
225ml water
30g fresh dill

Cocktail:

5 peeled cucumber slices (plus two unpeeled for garnish)
Pinch of granulated sugar
2tbsp lime juice
85ml gin (for us it’s got to be Portobello Road Gin!)
Splash of dill syrup
Tonic water
Ice

Makes: 2 cocktails

Directions for dill syrup:

1. Place sugar and water in a small saucepan; bring to a boil, stirring frequently. As the mixture begins to boil, add dill then reduce heat to medium. Simmer until sugar has completely dissolved.
2. Strain syrup into an airtight container (discard dill leaves), and keep in fridge for 3-4 days.

Directions for Cucumber & Dill Fizz:

1. Place cucumber slices in a cocktail shaker with sugar and lime juice; muddle with a wooden spoon. Add gin and dill syrup, and shake for 1 minute.
2. Fill a glass with ice then fill halfway with the gin mixture. Top off each glass with tonic water. Stir, and garnish with another slice of cucumber.
